French Breakfast Puffs
French Breakfast Puffs are dipped in melted butter and tossed in cinnamon sugar for a sweet and crunchy coating that are a favorite breakfast/brunch treat!

- 2 cups complete pancake mix
- 1 ½ cups buttermilk at room temperature
- 1 teaspoon pure vanilla extract
FOR THE TOPPING
- ⅓ cup melted butter
- ¾ cup sugar
- 1½ teaspoons cinnamon
Preheat oven to 375°F. Generously grease muffin cups with butter.
In a medium bowl, mix pancake mix and buttermilk well.
Then stir in vanilla.
Divide batter between muffin cups so that they are about ⅔ full.
Bake until a toothpick inserted in center comes clean, about 15 to 20 minutes.
While muffins are baking, make the coating.
Melt the butter in a bowl or glass pan. In a separate container, combine the sugar and cinnamon.
As soon as muffins are done, allow them to cool for just a minute or two before turning them out of the pan. Dip the warm muffins in the butter, coating thoroughly. Then roll in the cinnamon-sugar mixture. Don't be afraid to really coat 'em up.
Serve warm and enjoy
- No buttermilk, use this hack add about a teaspoon of vinegar or lemon juice to your milk and allow I to sit for a few minutes
- want mini muffins instead cut the recipe in half or make even more batches, bake for about 10-15 minutes
