Homemade Apple Cinnamon Waffles are made super quick with the help of pancake mix. The made from scratch apple cinnamon syrup makes these the best apple cinnamon waffles around!
I LOVE brunch! I mean could eat it everyday of the week. Some of my favorites include: Honey Butter Biscuits and Banana Foster French Toast and Crabmeat Omelet.
The idea for crating this recipe came after the hubs brought home bags and bags filled with apples from a catering event. I had to figured out what to do with all these apples. I loved it because if gave me a chance to be creative with apples.
For this, I basically took store bought pancake mix and gave it a fun spin. But, it’s the apple cinnamon syrup that really makes the difference. Of course you could use traditional pancake syrup, but I’m telling you the extra 5 minutes it takes to make the syrup are SO worth it!
WHAT MAKES THESE APPLE CINNAMON WAFFLES SPECIAL:
- Fresh Apple – give a great added bit of apple goodness.
- Cinnamon – give the waffles a sweet and warm aroma.
- Ginger – add a depth of flavor.
HOW TO MAKE APPLE CINNAMON WAFFLES:
- Peel and core. using an apple slicer peel, core, and slice apples to uniform bite size pieces.
- Cook the apples. Combine in a saucepan over medium heat butter, apples, cinnamon, ginger, vanilla, and brown sugar. Cook until soft enough to mash with a fork. Set aside
- Make the waffle mix. Remove half of the cook apples (reserving the other half for our apple cinnamon syrup) and mash with a fork to resemble apple sauce add to complete pancake mix add water or milk to the mix until it’s your desired thickness.
- Cook. Pour the batter on the heated waffle iron and cook to perfection!
4 STEPS TO HOMEMADE CINNAMON SYRUP:
- Combine remaining apples, butter, brown sugar, some maple extract, cinnamon, ginger, and maple syrup.
- Over medium heat stir and cook about 2 minutes.
- Remove from the heat
- Serve warm
STORING AND FREEZING APPLE CINNAMON WAFFLES:
- To Store: Store leftover waffles in the refrigerator for 2-3 days. Reheat, pop them in the toaster.
- To Freeze: Allow waffles to cool completely and store them in a freezer safe ziplock bag or container. Freeze waffles for up to 3 months. To reheat, allow them to come to room temperature and pop them in the toaster.

Equipment
- waffle maker
Ingredients
- 1 box Just add water pancake mix of choice use enough to make 2-4 waffles
- Milk replace for water in the pancake mix according to package
- 1-3 granny smith apples peeled, cored, and diced
- 1 Tablespoons butter
- 1 Tablespoons brown sugar
- 1/2 teaspoon cinnamon
- dash of ginger
- 1 teaspoon vanilla extract
- Optional Toppings: Fried Chicken, bacon, sausage, etc
Homemade Apple Cinnamon Syrup
- 1/3 cup maple syrup
- 1/2 teaspoon cinnamon
- 1 Tablespoon brown sugar (2 TBS if making only the syrup)
- 2 apples peeled, cored, diced remaining apples from earlier (use 2 if making only the syrup)
- 1 Tablespoon butter (2 TBS if making only the syrup)
- dash ground ginger
- 1 teaspoon vanilla extract

Want these waffles even faster?
Use apple sauce in place of the mashed apples for the batter. Simply mix all the seasoning into the apple sauce then add it to the batter.Did you make this recipe?
